Giving Thanks For These Recipes!

Though you may expect me to post traditional Thanksgiving recipes this time of year( like I did in last year’s Let’s Talk Turkey), I decided to try something a little different this year and share my marinara sauce and recently discovered lasagna recipes. It’s not that I don’t love mashed potatoes(they’re my favorite dish, after all) or that I don’t look forward to gobbling down some turkey. No, I decided to share these recipes because you probably already know how to cook the usual fare and I wanted to shake things up a bit. Whether you decide to bring a homemade lasagna to your family gathering on November 24 or save the recipe for your next dinner date, is up to you.

Marinara Sauce Recipe:

1/2 onion,
2 cloves garlic
1 can V8, Original
1 can stewed tomatoes
Tbsp garlic salt
Tbsp Italian seasoning

Directions: Place all ingredients in a blender and blend until smooth. Either use immediately or store in a jar in the fridge.

Lasagna Recipe:

1 link of chicken apple sausage, chopped
1/2 pound lean ground turkey
1/2 onion, minced
2 cloves garlic, chopped
1 can diced tomatoes
1 can tomato paste
1/2 jar marinara sauce
1/2 cup water
2 tbsp white sugar
1 tsp dried basil leaves
1/2 teaspoon fennel seeds
1 tsp Italian seasoning
1 tbsp salt
1/4 tsp ground black pepper
4 tbsp chopped fresh parsley
6 lasagna noodles
16 ounces ricotta cheese
1 egg
1/2 tsp salt
1/2 pound mozzarella cheese, sliced
1/2 cup shaved parmesan cheese

In a Dutch oven, cook sausage, ground turkey, onion, and garlic over medium heat until well browned. Stir in diced tomatoes, tomato paste, marinara sauce, and water then season with sugar, basil, fennel seeds, Italian seasoning, 1 tbsp salt, pepper, and 2 tbsp parsley. Cover and cook for about 30 minutes, stirring occasionally.
Bring a large pot of water to a boil. Cook lasagna noodles for 8 to 10 minutes. Drain noodles and rinse with cold water. In a mixing bowl, combine ricotta cheese with the egg and remaining parsley and 1/2 tsp salt.
Preheat oven to 375 degrees F. To assemble the lasagna, spread 2 cups meat sauce at the bottom of a 9×13 baking dish. Arrange 3 noodles lengthwise over sauce then spread with ricotta mixture. Arrange the remaining 3 noodles lengthwise then spread with meat sauce, then top with the mozzarella and parmesan cheese. Cover with foil and bake in the oven for 25 minutes. Remove foil and bake for an additional 25 minutes. Enjoy!
