I recently signed up for Imperfect Produce(imperfectproduce.com) and now receive their 8 pound fruit and vegetables box for $11 every two weeks. What I love about the produce I receive is that I don’t know what’s coming, so it keeps me on my toes and I get to try new things in the kitchen(you can customize your box for to only get what you like, though). The issue that I’ve come across is that 8 pounds happens to be a lot of produce for just one person. So, with my last box, I do what I always do: make one dish with only what I have on hand. The box came with onions, cabbage, carrots, and potatoes, among other things, and I was in the mood for comfort food so cabbage soup seemed like the perfect choice. It was so yummy(and I had so many of each ingredient) that I made it three separate times within two weeks! I had it for lunch and dinner and even breakfast one day. Not only is the soup super filling, but it’s packed with healthy ingredients which each come with their own benefits. Namely, cabbage is a good source of manganese, dietary fiber, potassium, vitamin b1, folate, copper, choline, phosphorus, vitamin B2, magnesium, calcium, selenium, iron, pantothenic acid, protein, and niacin. 6-8 large carrots, thinly sliced
4 large red potatoes, cubed
1/2 large onion, minced
1 medium head green cabbage, thinly sliced
4 cloves of garlic, minced
6 cups chicken stock
1 tbsp olive oil
1/4 tsp dried thyme
1 tsp dried basil
2 tsp dried parsley
Salt and ground black pepper to taste
Combine all ingredients in a stock pot over medium-high heat. Bring to a simmer and cook until carrots are soft, about 30 minutes.
